Potrebno je:
(za 3-4 osobe)
1 veći ili 2 manja plava patlidžana
1 glavica crnog luka
1 ljuta papričica
2 čena belog luka
1 konzerva leblebije (ili 200 ml sirove)
2 paradajza
200 ml pasiranog paradajza
1 kašika koncentrovanog paradajza
1 kašičice kumina
1 kašičica kurkume
pola kašičice korijandera
1 kašičica bibera
soli po ukusu
malo maslinovog ulja

Način pripreme:
Patlidžan sam iseckala na kockice, dobro nasolila i stavila u cediljku da odpusti "gorčinu", zatim sam ga dobro obrisala i pržila par minuta na malo maslinovog ulja.
Izvadila sam patlidžan na tanjir, dodala još malo maslinovog ulja u tiganj, stavila sitno seckan crveni luk i papričicu a nešto kasnije i leblebiju. Posle par minuta dodala sam koncentrovani paradajz a posle 30-ak sekundi i seckani (oljušten i bez semenkica) i pasirani. Sve sam dobro promešala, dodala začine, beli luk i sve zajedno dinstala oko 10-ak minuta.

Pred kraj vratila sam patlidžane, kratko sve prodinstala i servirala.
Servirala sam sa kuvanim pirinčem, a može i kus-kus, bulgur, palenta... i od gore sam stavila malo gustog jogurta i sve posula sa malo peršun lista...
